Ingredients
- 2 cups water
- 1 Tbsp sugar, plus extra as needed
- 1 cup fresh mint leaves, packed divided
- 4 cups chopped cantaloupe
- 3 Tbsp freshly squeezed lime juice
Pro tip:
Experiment with different fruits and combinations, like green tea and blueberries.
Directions
- Combine water, sugar, and mint leaves in a saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sugar dissolves.
- Remove the pan from the heat, allow the syrup to cool, and strain liquid
- Use blender or food processor to puree the syrup, cantaloupe and lime juice. Add extra sugar to adjust sweetness.
- Pour the mixture into a baking dish and freeze until firm, at least 8 hours or overnight.
- Use the tines of a fork to scrape the granita into chilled bowls and serve.
- Eat immediately or keep for 3 days, scraping every so often.
