Cooling cantaloupe granita

These simple treats are not only a yummy way to cool off, they can also help relieve medication side effects such as dry mouth and difficulty swallowing.

Cantaloupe granita

Ingredients

  • 2 cups water
  • 1 Tbsp sugar, plus extra as needed
  • 1 cup fresh mint leaves, packed divided
  • 4 cups chopped cantaloupe
  • 3 Tbsp freshly squeezed lime juice

Pro tip:
Experiment with different fruits and combinations, like green tea and blueberries.

Directions

  1. Combine water, sugar, and mint leaves in a saucepan over medium heat. Bring to a boil, reduce heat, and simmer until sugar dissolves.
  2. Remove the pan from the heat, allow the syrup to cool, and strain liquid
  3. Use blender or food processor to puree the syrup, cantaloupe and lime juice. Add extra sugar to adjust sweetness.
  4. Pour the mixture into a baking dish and freeze until firm, at least 8 hours or overnight.
  5. Use the tines of a fork to scrape the granita into chilled bowls and serve.
  6. Eat immediately or keep for 3 days, scraping every so often.
